Mid Vacation Snack
Mmmmmmm who doesn't love warm gooey chocolate chip cookies?
Wanted a sweet chewy treat today, so I risked the $4 price tag on this box of Betty Crocker GF cookies.
They are simple: just add butter, vanilla and an egg!
Fresh, they are perfect. But they become dry very fast! Next time, I will substitute with applesauce to make them softer.

Tuesday Dinner
No picture today! But I made mine and my daughters favorite meal...Shepard's Pie!!!!
I make mine with hamburg that I season with just pepper and onion powder. I stir and chop it a lot while it's cooking in the frying pan...I like very very fine hamburg. When it's finished, I put it into the bottom of a casserole dish (mine is round so it fits this particular meal perfectly). Next, I take a bag of frozen corn, cook it with butter, then put it on top of the hamburg in the casserole. Then, top with mashed potatoes. Lastly, it goes into the oven at 375 for about fifteen minutes!
Sooooooo yummy!!!

Easy GF Snack!
It's so easy a caveman or monkey can do it! What's a really easy and yummy healthful snack?!
POPCORN!
You can add whatever your heart desires for a flavoring.

-melted butter
-white cheddar cheese shaker
-dill weed
-New Mexico red chile powder

Revolution Bakery
So, on Friday, my Mom and I drove over to Revolution Bakery on San Felipe Ave in Santa Fe. Apparently they are not currently open, as they are doing an overhaul to their bakery, removing any gluten flour and contaminants. They will re-open their doors soon as a 100% Gluten Free bakery. This is only a few blocks from where I live, how exciting! But they let me come in, and gave me a couple samples of berry muffins. One was gluten free, and the other was GF and vegan! Both were simply delicious! Moist and flavorful, I was able to cut them in half without crumbles, and put butter on both! Yummmmmm!
